A few friends & I came together for National Pancake Day to share all things Pancakes! (Check out #ladyblogrecipes) The Boys were in on making these with me and could not stop eating them during the process. 😂 I don't blame them though because they are perfect bite sized Pancakes for little ones and even adults !
What you need:
Cake Pop Sticks
Fruits of Choice
Pancake Mix or Homemade [my fave is from scratch]
Food Coloring
Our Pancake Recipe:
1 1/2c Bob's Red Mill GF All Purpose Flour
3 tsp Bob's Red Mill GF Baking Powder
1 1/2 tbsp Sugar
1 tsp Salt
1 1/2c Milk
2 1/2 tbsp Melted Butter
1 Egg
1 - 1 1/2 tsp Vanilla Extract [ we make ours & if you'd like I can share how we do that!]
Mix your dry ingredients together and be sure to sift your flour! Once everything is combined add your Milk, Egg, Vanilla Extract & Melted Butter. Stir until well mixed!
Next you will divide your Pancake Batter into 6 separate bowls . We used most of the colors of the rainbow 🤗🌈

You'll then heat your pan and keep it on low so you don't burn the Pancakes. I also sprayed our pan with Coconut oil to be sure they didn't stick . Haha Smaller pancakes can be tricky but after one go around it was smoothe sailing so don't give up . 😂 Once they are done cooling you'll grab your fresh fruits and add them to your Cake Pop Sticks along with your colored Pancakes! Top with a Strawberry & Grab your Maple Syrup . Enjoy ! 🥞🧡🌈
